The Divas at Flat Creek Estate are offering a special Valentine’s treat for friends or lovers. The Texas Hill Country Wine Trail is sponsoring several events throughout the year. Coming up February 8-10 and February 15-17 is the Wine Lover’s Trail. "Another Kitchen Helper"

Has this ever happened to you? You don’t drink all the wine in the bottle and you cork it and put it in the frig to help keep it fresh. You don’t have room to stand the bottle up, so you lay it flat and, darn it, it leaks.

Maybe you’ve tried propping the neck of the bottle up on a stick of butter, a sausage, or a soda can, all to no avail. What’s a solution?

Here’s this issue’s tip: buy a large plastic spoon cradle from your favorite kitchen store. One about 12 inches long with a 1.5 inch rise from back to front, and a 4.5 inch diameter cradle should work just fine. Place the bottle on the cradle so the neck tilts up and, voila, no dripping bottle.

My Recipe

"Cherry Nut Muffins"

A delicious recipe from the staff of Sweet Tomatoes

CHERRY NUT MUFFINS
Makes 8 cups of batter

Preheat oven to 325 degrees F.

3-1/2 cups white flour
¾ cup wheat flour
2 tablespoons baking powder
1 teaspoon table salt
1 cup diced walnut pieces
2 cups reduced-fat buttermilk
1-1/8 cups granulated sugar
1 cup canola oil
½ cup beated eggs (2 eggs)
½ cup cherry juice
2 cups thawed tart cherries

Combine the flours, baking powder, salt and walnut pieces in a bowl and thoroughly mix. In a separate bowl, combine the buttermilk, sugar, oil, eggs and cherry juice and whisk to dissolve the sugar. Combine the wet mixture with the dry and add the tart cherries. Mix with a large spoon until the ingredients are thoroughly combined. Do not over-mix the batter. Coat muffin pan with non-stick spray, or use paper liners. Fill muffin tins approximately ½ to ¾ full and bake for 15-20 minutes. Baking time will vary depending on oven and size of muffin.
