Two More Spam Recipes

Here are two more Spam recipes from the centerfold of our August-September issue, Spamalicious. Both are from Textile pastry chef Plinio Sandalio.

SPAM CINNABUN
for the dough
0.4 oz.instant yeast
3 ½ oz. bread flour
1/4 cup sugar
2 tsp. salt
1 cup milk
1 lb. butter
cinnamon spread (recipe below)
1 can Spam
1 egg

METHOD: Place instant yeast, flour, sugar salt and milk in bowl of electric mixer. With dough hook, mix on medium until dough is smooth and elastic. Turn out dough onto floured surface. Cover with damp towel and let rest for 15 minutes. Roll dough into 10×16-inch rectangle. Place in sheet pan, cover with plastic and chill.

While waiting, soften butter in electric mixer with paddle attachment. Paddle until butter is soft and spreadable. On parchment paper, spread soft butter into a 8×7-inch rectangle. Chill until butter is solid. Remove dough from cooler, let rest for 5 minutes. Remove butter from cooler and place at left end of dough. Fold excess dough over butter to encase. Let rest at room temp for 10 minutes. On floured surface, roll dough into a 10×16-inch rectangle. Fold into thirds, like a letter. Repeat three times.

Cut dough in half. Wrap half in plastic and reserve in freezer for another use. Spread cinnamon spread (below) onto laminated dough, make sure to leave one inch at end of dough free of cinnamon spread. Thinly slice Spam, lay out sliced pieces of spam over the cinnamon spread. Brush 1 inch of dough free of spread with egg. Roll dough tightly. Cut roll into slices and place in cavities of oiled 2 ½-inch muffin pan.

Cover with damp towel and let rest at room temp for 15 minutes. Bake at 350°F for 15 minutes or until done. Remove from pan and serve warm. Serves 4 to 6.

for the cinnamon spread
2 oz. butter, soft
3/4 cup light brown sugar
2 Tbsp. cinnamon, ground

METHOD: In electric mixer with paddle attachment, cream butter, sugar and cinnamon. Keep soft at room temp.

SPAM ICE CREAM
8 oz. Spam
1 oz. butter
1 qt. heavy cream
3 cup milk
2 cup sugar
1/4 cup light corn syrup

METHOD: Cut Spam into small cubes, place in heavy pot with butter. Cook Spam until fat renders out and Spam is light golden brown. Add heavy cream, milk, sugar and light corn syrup. Cook until a light simmer. Remove from heat and run in blender on high speed. Strain through fine chinois. Discard any solids left in strainer. Chill Spam ice cream base. Run per machine’s instructions in ice cream machine. Yields 2 1/2 quarts.
