The Beez Ness Martini
THE BEEZ-NESS MARTINI
(This is a modification of a vintage drink called the Bee’s Knees, from Todd Summerlin, GM and mixologist at Polo’s Signature)
1 oz. Hendrick’s Gin
1 oz. Bombay Sapphire Gin
1 oz. American Honey Liquor
1 oz. lavender simple syrup (recipe below)
scant 1 oz. fresh lemon juice
honey
bar sugar for rimming glass
METHOD: In a cocktail shaker filled with ice, the two gins and the American Honey Liquor, add the lavender simple syrup and a little less lemon juice than syrup. Add a few drops of real honey. Shake vigorously. Using a martini glass from the freezer, rim the glass with a small line of honey, then dip in the sugar. Strain drink into glass.
LAVENDER SIMPLE SYRUP
1 cup granulated sugar
1 cup water
3 Tbsp. dried or fresh lavender flowers
METHOD: Combine the sugar and water in a small pan. Heat until all sugar is dissolved. Stir in the lavender and continue stirring until it is browned. Remove from heat and store in the fridge for up to one month. For stronger syrup, leave the lavender in while storing. Strain the syrup when you use it.
