Winter may be an improbable time of year to solicit three recipes for cold seafood cocktails, but ceviche has recently become such a staple on Houston menus that everyone is eating and talking about the latest version. Some are the true raw and marinated ceviche, while others begin with lightly cooked seafood that is tossed together into a concoction about a million miles beyond the standard-issue shrimp cocktail. All are composed of tiny bits of tasty sea critters, just enough to lure you into wanting more.
