Bologna is the capital of Emilia-Romagna, both politically and gastronomically, and it is the home of the ragù that we call Bolognese sauce. Like so much comfort food, the recipe is imprecise. However, it is characterized by a mix of meats, plenty of vegetables, not too much tomato sauce. Here are three versions.
